I don’t know about you, but holy cow, mornings are N-U-T-S over here at our Happy Home.
As soon as the Happy Buddy’s eyes *bing* open he gets going at 150 miles per hour with needs.
“I need to pee. I need you to wipe me. I need you to help me pull up my pants. I need help turning the TV on to my favorite show. I need you to help me get my shirt off. I need you to play with me. I need you to read me a story. I need help finding my favorite toy. I need BREAKFAST!”
Literally that all happens within the first 2 minutes of him being awake.
Then the Happy Baby wakes up and we’ve got his little routine.
And, of course, there’s the Happy Hubby and putting together his lunch for work, finding him his wallet that I hid the day before because I have a serious problem with hiding clutter, and grabbing him a towel out of the dryer because I forgot to hang them back in the bathroom after I washed them and he is standing there all drippy and shivering.
Relate?
Needless to say, there is not a whole lot of time for my own needs – especially my food needs. And if Mama don’t eat, Mama don’t function.
So I have been on a mission to find simple, healthy breakfast recipes that I can eat in between serving all the precious needs of my Happy Home in the morning.
Here is one of my favorites – The Yogurt Banana Split (and it involves a little bit of chocolate, girls. You’re welcome.). 🙂
First, you will need some yogurt.
When I was pumping for the Happy Baby, I went dairy-free to see if it would help his massive issues with reflux.
I was super sad that I couldn’t eat yogurt anymore, BUT THEN I found this yogurt – made from coconut milk – at our local Whole Foods Market.
And it changed my life.
Vanilla yogurt (you can use whatever brand of yogurt you like best – I used the dairy-free version mentioned above)
Sliced bananas
Sliced strawberries
2 tsp. walnuts, chopped
2 tsp. chocolate chips (I may or may not edit this to 2 tablespoons in real life) 🙂
Mix everything together.
BAM.
Super easy to make and the chocolate chips give it that glamorous touch.
Chocolate? In the morning? What’s not to love?

MY daughter had really bad reflux as well and this yogurt was a life saver, I also enjoyed their frozen treats. Then when she started eating this yogurt, oh my she had to have it every day. We are so blessed!!
