While the leprechauns and I are conferring about ideas for St. Patrick’s Day, to pass the time I thought I’d share a few more of the Happy Hubby’s A-List Meals!
This Taco Pizza is something the Happy Hubby literally requests 2-3 times a week.
He LOVES it!
And I love it because it is a cinch to make!
- 1 lb ground beef
- 1 (1 1/4 oz) package taco seasoning, divided
- 1 jar taco sauce
- 1 (8 oz) box corn muffin mix
- 1 (8 oz) pkg shredded Cheddar Cheese
- Toppings – sour cream, chopped tomatoes, chopped green onions, hot peppers, salsa, shredded lettuce
Step 1:
Prepare corn muffin mix according to package directions. Spread in a greased 8×8 baking dish. Bake at 400 degrees for 6-8 minutes.

Stir 1/2 package of taco seasoning mix into the beef. Reserve the remaining mix for another recipe.
Step 4:
Add any additional ingredients according to taco seasoning mix directions, reducing each by half.
Step 5:
Remove cornbread from oven and spread with taco sauce.

Return to oven and continue baking for 15 more minutes. Let stand 2-3 minutes.
Cut into squares, serve with desired toppings, and enjoy the verbal praises of your Happy Home as they declare the WONDER of DELICIOUSNESS that is exploding in their mouths.
