My dad looooooooooves Grasshopper Pie.
My mom can do anything in the kitchen and would make him this incredible pie on special occasions.
For Father’s Day this year, we invited my mom and dad over for lunch to celebrate and I wanted to make him his pie.
But I wasn’t even going to begin to think about attempting the recipe my mom has always used.
Talk about complicated!! Food processors and creme de la menthe… I do not even know where to find the latter in a grocery store.
What I needed had to be 3-4 ingredients with an equal amount of steps.
After a few minutes of Pinterest-ing, I discovered this super simple Grasshopper Pie recipe and decided to give it a go.
Ingredients:
4 cups mint chocolate chip ice cream, softened
1 chocolate crumb crust (8 inches)
5 Oreo cookies, chopped
1/3 cup chocolate-covered peppermint candies (like Andes Mints or Junior Mints)
Chocolate hard-shell ice cream topping
1. Spread ice cream into crust.
2. Sprinkle with cookies and candies. Drizzle with ice cream topping.
3. Freeze until firm.
4. Remove from the freezer 15 minutes before serving.
**It was Dad-tested (several times, in fact) and Dad-approved. :-)**
Just look at that face!!!!!
He loved it and happily took the rest of the pan home as his Father’s Day gift.
