Thanksgiving is one of my favorite holidays. The coming together of those you love and care for, the weather and the football, all mixed with the anticipation of a huge meal for everyone to enjoy. It’s my kind of holiday. It’s also that one time of year when everyone pays attention to the little things and we fill up a gratitude list with all of those things that make our life so full. Our children, our parents, our friends and for another year….
We are especially grateful this year for our faith, for the forgiveness of sin and the promise of the coming King!
And let the peace of Christ rule in your hearts, to which indeed you were called in one body. And be thankful. Let the word of Christ dwell in you richly, teaching and admonishing one another in all wisdom, singing psalms and hymns and spiritual songs, with thankfulness in your hearts to God. Today I’m sharing a super easy Oatmeal Stuffed Honey Baked Apple. It’s simple enough for a crisp fall weekday family breakfast, but so scrumptious, you can wow your guests the morning after Thanksgiving dinner.

Oatmeal Stuffed Honey Baked Apple
Ingredients
Directions
Preheat the oven to 400 degrees F.
Cut the stem and center of each apple to create a hole in the middle. It has to be big enough to stuff the oatmeal in.
Bring the water to boil. Add the oats and the salt and reduce the heat to a simmer. Cook, stirring often, until the oats are thick and creamy, about 10 to 15 minutes. Stir in the heavy cream and brown sugar.
Fill each apple with the oatmeal and bake for 35 to 40 minutes, until the apples are softened.
Serve immediately and top with honey. If you’re serving as a dessert, top with ice cream!
