Recipe – Popcorn Cake

I know your eyes must be poppin’ out of your head with excitement as you admire this delicious fun-ness!

A Popcorn Cake!

Here, my Happy Home friends, lies the answer to your What should I do with my Happy Buddies this summer? question.

What you need to make a Popcorn Cake3 bags of microwave popcorn (popped and seeded) *I actually ended up only being able to use about 2 1/4 bags

1 stick of butter

1 (16 oz) bag large marshmallows

1 lb bag of M&M’s

1 1/2 cups unsalted peanuts, optional

Bundt Cake pan (heavily greased or sprayed)

How to Make a Popcorn CakeStep 1.  Melt butter and marshmallows in the microwave for 1 minute.

Stir and then return to microwave for another 1 1/2 minutes.Step 2.  Combine marshmallow mixture, popcorn, M&M’s (save a handful for Step 3!) and peanuts all together.

*Dear Happy Home Friends, please note that a bowl the size of Jupiter would be the most helpful during this step so that marshmallow/popcorn goo does not get all over your counter.

Step 3.  Sprinkle some extra M&M’s on the bottom of a super well-greased Bundt pan.Step 4.  Pour the popcorn mixture over the M&M’s and press it in tight!  Let it sit for 1-2 hours or overnight.

Step 5.  Remove from the pan and let the fun begin!

A Popcorn Cake can be cut and served with a good knife or just be crazy and let everyone dig in with their bare hands. :-) I hope that the Popcorn Cake becomes a ‘POP’ular treat in your Happy Home!

    Oh wow! That is so cool and looks great! We used to buy popcorn balls that I could only find around Halloween. I’m thinking this might be similar. We love popcorn around here and can’t wait to try this! So glad you shared at Nothing But Country!

    Yum! I’ve been making variations on rice krispie treats, too! I’ve recently made marshmallow bar treats with crushed Ruffles potato chips and dark chocolate. I also made some out of broken up mini pretzles. Both were hits at a cookout and a work, respectively! I will be making both again! Now I will have to try your popcorn cake, too!
