I had to post this recipe super fast because Ryan was absolutely freaking out about how good it is! He joked that he would like to only eat this for the rest of his life.
I am sure that many of you are in the weeds right now with back to school adjustments! We have had a river of emotions at our house this weekend as everyone is getting used to the new routines. We have also already been hit with a wave of sickness and fevers – happy back to school, indeed!
This recipe is quick and easy to make. I know your family will love it!
- 1 lb lean ground beef
- 1 T tomato paste
- ⅓ cup corn kernels
- 2 cups cheddar cheese, shredded
- ¼ cup beef broth or water
- 1 packet taco seasoning
- 4 flour tortillas
- Butter
- Brown the ground beef in a large skillet and drain.
- Add the tomato paste and the taco seasoning packet. Cook and stir for a few more minutes until everything is well mixed.
- Add corn and mix. Heat through for another few minutes.
- Place tortillas on a flat surface. Divide the cheese and add it to half of each tortilla.
- Top cheese with beef mixture, evenly spread over each tortilla.
- Fold tortillas in half to make a half-moon shape.
- Cook quesadillas in a hot pan with butter, flipping once and cooking until both sides are nicely browned and the cheese is melted.
- Remove quesadillas from pan and let rest for a few minutes before cutting into triangle shapes.
- Serve with a dollop of sour cream and enjoy!
