Everyone loves an easy recipe!
And with Back to School season upon us, our Happy Homes need a quiver-full of quick meal ideas!
I have shared before that the Happy Hubby loves taco-y dishes.
His favorite is this Taco Pizza recipe.
So when I mixed it up and whipped together these Taco Pockets, he couldn’t have been more thrilled!
Ingredients:1 pkg (1 oz) taco seasoning mix
2/3 cup water
1 1/2 cups salsa
1 lb lean ground beef, cooked and drained
1 can (16.3) oz Pillsbury GRANDS! Refrigerated Biscuits
1 cup shredded Mexican cheese blend
1 cup sour cream, if you want it! (Not pictured because we didn’t want it.) 🙂
Directions:
Step 1 – Cook taco seasoning mix, water, 1/2 cup of the salsa, and cooked ground beef until thickened.Step 2 – Press each biscuit into 6-inch round.Step 3 – Fill each with 1 T cheese and taco mixture.Step 4 – Fold dough over filling and press to seal. Place on a greased cookie sheet.Step 5 – Bake at 375 degrees for 9-14 minutes or until golden brown.Step 6 – Serve with remaining salsa, cheese and sour cream.
Now you know what to make for dinner after school today! 🙂

Hey Christina! I think I may have roasted them? Sometimes I will saute them with oil and s+p in a pan, but I think in this photo I had cut them, tossed in oil, and s+p and then roasted at 450 degrees for about 15 minutes? Yummy! And I am so happy you liked the taco pockets!
