Here is another one of my favorite meals that just turns your Happy Home into an aromatic Autumn-fest!
Plus, the prep is wayyy easy and it cooks just 4 hours in the slow cooker. A total win-win.
I hope you love it as much as we do!
4 center-cut bone-in pork loin chops, 1-inch thick (about 2 lbs), trimmed of fat
1/4 tsp salt
1/4 tsp pepper
6 T packed brown sugar
2 T cider vinegar
1 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground red pepper (cayenne)
1/4 cup sweetened dried cranberries (you could use dried cherries or golden raisins instead!)
2 medium baking apples, peeled and chopped (2 cups)
1. Spray a 3-4 quart slow-cooker with cooking spray. Sprinkle pork with salt and pepper and place in cooker.
2. In small bowl, mix brown sugar, vinegar, ginger, cinnamon, red pepper, and cranberries.
5. Cover and cook on LOW heat setting for 4 hours to 4 hours 30 minutes.
Serve with sweet potatoes for the perfect fall meal.

This is now one of my favorite recipes. The little bit of cayenne keeps it from being too sweet. I have trouble with pork chops drying out and I’m not a fan of pork chops with “cream of something soup” this comes out tender every time. Great fall flavors and I love the apples over mashed potatoes.
