Just staring at the picture above brings back great memories of the meal our Happy Home shared last night!
And the even greater memory of when 5 o’clock rolled around I didn’t have to pull my unbelievably tired self off of the couch (only 1 more week until we are out of the first trimester!! I think I should make myself a paper chain to countdown! :-)) and cook something because I had already prepared everything in the morning!
Slow Cooker Pepper Steak
Ingredients:
(Couldn’t fit everything into one shot, so here are 2 pictures to help you see everything!)2 lbs beef sirloin, cut into bite-sized strips
1/2 cup onion, chopped
2-3 peppers, thinly slicedGarlic powder, to taste
1 cube beef bouillon
1 T cornstarch
1/4 cup hot water
14-oz can stewed tomatoes
3 T soy sauce
1 tsp sugar (not shown)
1 tsp salt (not shown)
Directions:Step 1 – Sprinkle beef with garlic powder and brown in oil over medium heat.Step 2 – Transfer to slow cooker.Step 3 – Mix together bouillon cube and hot water until dissolved.Step 4 – Stir in cornstarch until dissolved.

Step 5 – Pour over beef mixture.Step 6 – Stir in remaining ingredients.
Step 7 – Cover and cook on LOW setting for 6-8 hours, or on HIGH for 3-4 hours.Serve over a bed of rice or couscous!

Mmmmmmm, this looks so good! Most of our meals are planned out or already cooked for this week, but this is going on the menu this weekend. Thanks for the great recipe, I have everything but the steak already in the house. We will be enjoying this served over a bed of rice. I love the Delish Dinners in a Dash cards you made up. I printed it out on cardstock, left it whole and have it hanging on the side of the fridge for when I need a fast but good meal idea. Please think about doing another set, they are great ! I might just have to cover mine with clear Contact .
