Recipe – Chicken Bruschetta Bake (the BEST meal to take to someone!)

Chicken Bruschetta Bake - best meal for busy nights or for when taking a meal to someone in need!

I posted this recipe 5 years ago when I had a camera from 1940 and the photos just did NOT do this dish justice!  (You can see it HERE, but don’t judge – ha!)

So here it is again and just in time for the Back to Crazy Back to School season!

When Mr. B. and I got married and I knew about zero things about cooking, I found this recipe on the back of a box of Kraft Stovetop Stuffing and knew it was easy enough for me to pull off.

Mr. B. ended up LOVING it and it currently resides at the top of his favorite meals list (and has stayed there for 13 years – holla!).

I know y’all will love it too!

Chicken Bruschetta Bake (the BEST meal to take to someone!)

Ingredients
  • 1 can (14-1/2 oz.) diced tomatoes, undrained
  • 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
  • ½ cup water (I use chicken broth for a little extra flavor if I have it on hand!)
  • 2 cloves garlic, minced
  • 1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
  • 1 tsp. dried basil leaves
  • 1 cup Shredded Mozzarella Cheese (I like to use the 6-cheese Italian blend – yum!)
Instructions
  1. MIX tomatoes, stuffing mix, water, and garlic just until stuffing mix is moistened.
  2. LAYER chicken, basil and cheese in 9x13-inch baking dish.
  3. TOP with stuffing mixture.
  4. BAKE at 400 degrees for 30 minutes or until chicken is done.

This recipe is also such a cinch to make that I have found it to be one of the best for taking to new mamas or families/friends in need of a meal.

But if you do take this to someone, don’t forget to ADD THIS IMPORTANT THING!

    Your stovetop Buschetta bake looks awesome. Just one question, are you supposed to pre-cook the stuffing or just add the stuffing and seasoning uncooked to the top of the casserole?

      Hey Marie! No, do not pre-cook the stuffing! Just add the stuffing mixture (tomatoes, water, garlic, stuffing – all mixed up) to the top of the casserole. Enjoy!

    Have you ever frozen this? It looks like you can put it together pretty easily, so that’s not really necessary, but I like the idea of taking a “today” meal and a freezer one for new moms, etc., so I was just wondering if this could be made ahead?

      I have never frozen this!! I am not sure the stuffing would hold up too well… But I am also not an expert on freezing meals. I am so sorry to not be much help!! Let me know if you figure something out!!

    Julie, does the chicken have to be raw (and therefore create some juice in the cooking), or can it already be cooked (as the person suggested for Thanksgiving leftovers)? My pre-cooked Chicken Bruschetta is in the oven baking as I write…

      Hi Nancy! I always use uncooked chicken when I make this recipe!! Let me know how it turns out with the cooked chicken… I would imagine you wouldn’t have to cook it for as long or at as high a temperature. I hope you love it!!! xoxo

        It was very good with the cooked chicken, but I suspect it would have more moisture with uncooked (it was slightly dry to me, especially in reheating–my husband really loved it!). In order for the stuffing to brown slightly, I think you’d want to keep the same temp and time. Five stars for super easy!

This might be a new go-to for me, as we are often bringing meals to people in our community and I have a bad habit of choosing labor intensive recipes that add a little too much tension to the opportunity to help others (while taking care of our kids!).
