My dad is the Music Director at a large church in South Florida. Many years ago, a woman who worked in the church Music Office would bring this delicious coffee cake to work every fall season for her co-workers to enjoy.
There was never a crumb left behind!
To make this yummy coffee cake, you will need a special ingredient – maple flavoring.
You can find it at most grocery stores, but also on Amazon HERE.
This recipe is best served warm on Thanksgiving morning while your family is watching the Macy’s Thanksgiving Day parade on TV.
Or make one and take it to the firefighters working on Thanksgiving day!

- 1½ cups flour
- ¾ cups brown sugar, packed
- 2 tsp baking powder
- ½ tsp salt
- ¼ tsp baking soda
- ⅔ cup buttermilk
- ½ cup pumpkin
- ⅓ cup oil
- ½ tsp maple flavor
- 2 eggs, beaten
- Topping - ½ cup sugar, 1 tsp cinnamon, 1 tsp maple flavor
- Mix together all cake ingredients.
- Pour half of the batter into a sprayed 9" square pan.
- Sprinkle half of topping over layer.
- Add rest of cake mix.
- Sprinkle rest of topping on top.
- Bake at 350 degrees for 25-30 minutes.
