Recipe - Pumpkin Maple Coffee Cake

Ingredients
  • 1½ cups flour
  • ¾ cups brown sugar, packed
  • 2 tsp baking powder
  • ½ tsp salt
  • ¼ tsp baking soda
  • ⅔ cup buttermilk
  • ½ cup pumpkin
  • ⅓ cup oil
  • ½ tsp maple flavor
  • 2 eggs, beaten
  • Topping - ½ cup sugar, 1 tsp cinnamon, 1 tsp maple flavor
Instructions
  1. Mix together all cake ingredients.
  2. Pour half of the batter into a sprayed 9" square pan.
  3. Sprinkle half of topping over layer.
  4. Add rest of cake mix.
  5. Sprinkle rest of topping on top.
  6. Bake at 350 degrees for 25-30 minutes.
