I loooooooooooooooooooved pudding when I was a kid.
In the summer, my mom would occasionally make pudding as a special treat for after dinner. She’d mix up the vanilla powder with the creamy milk and pour it into fancy glass bowls so that we each had our own special portion in our own special grown-up dish.
Then came the best part.
When the pudding was set, my mom would gently sprinkle each dish with rainbow-colored jimmies.
Oh, how I couldn’t wait to peek my nose into the refrigerator and see those beautiful dishes all lined up neatly filled with buttery colored magic and topped with a sugary sprinkling of wonder!
Often, my dish in the fridge was the one that looked like it had a finger scoop in it. 🙂
It was the little things that really did it for me!
What a simple and magical dessert for your little ones to enjoy this summer. Grab a box of Jell-O pudding and get THEM to help you make it! A little one can easily help you with the mixing and an older child can measure out the milk. Then use your fanciest tall-stemmed glasses or prettiest dishes and make pudding into a special celebration. And don’t forget the rainbow-colored jimmies!

Ingredients: 1 pkg. (3.9 oz) Jell-O Chocolate Instant Pudding; 2 cups cold milk; 6 Oreo cookies; 1/2 cup thawed Cool Whip Topping
Directions:
Step 1 – Beat pudding mix and milk in a large bowl with whisk for 2 minutes.
Step 2 – Place cookies in a resealable plastic bag; seal bag. Use a rolling pin to crush the cookies (what kid wouldn’t love beating up a bag of cookies??).
Step 3 – Add cookies and Cool Whip to the pudding mixture. Stir just until blended.
Step 4 – Spoon into 9 small paper or plastic cups.
Step 5 – Insert a wooden pop stick or plastic spoon into each for a handle. FREEZE for 5 hours or until firm.
TIP – To remove pops from the cup, place bottom of cup in a bowl of warm water for 15 seconds. Press up on bottom of cup.
DOUBLE TIP – You can use vanilla pudding and chocolate chips or rainbow-colored jimmies or another mix-in fave instead!
TRIPLE TIP – Target sells a pack of 150 colored popsicle/craft sticks for just 1 dollar! They are way more magical because they are colored!! And because there are so many, you can invite the whole neighborhood over for a Pudding Pop Party! 🙂
