Recipe – Zucchini Bread of America

Yesterday was National Leave a Zucchini on Your Neighbor’s Porch Day.

We thought it would be more fun to not only leave a zucchini (with a pair of googly eyes glued on) but also a loaf of homemade zucchini bread.

This recipe is my favorite and will make your whole house smell amazing as it bakes.

You’re going to wish it was National Leave a Zucchini on Your Neighbor’s Porch Day every day. :-)

Ingredients -

3 eggs, beaten

1 cup oil

2 cups sugar

2 cups zucchini, grated

1 T vanilla extract

3 cups flour

1/2 tsp baking powder

1 tsp baking soda

1 tsp salt

2 tsp cinnamon

Optional – 1/2 cup chopped nuts

Directions -

1.  Mix together the eggs, oil, sugar and zucchini.  Add the vanilla.

2.  In a separate bowl, combine the remaining ingredients (except the nuts, if you are using them).

3.  Add to zucchini mixture.

4.  Stir in nuts.

5.  Pour batter into 2 lightly greased 8×4 loaf pans.

6.  Bake at 325 degrees for about one hour.

    Going to do this in the morning. I have so many zucchini in my garden every day has been leave a zucchini with your neighbor :) Actually its been leave a pepper, tomato and zucchini with your neighbor :)
