My kid is eating zucchini.
Well, zucchini that is baked into a sweet little cupcake of flour, sugar, and chocolate.
But that’s neither here nor there – it’s still zucchini, people.
These muffins make our Happy Home so happy.
Not only do they taste good, but they make excellent little treats to deliver to people we encounter throughout the week – our mail lady, the Happy Baby’s therapists, teachers, etc.
You could attach a little tag that says, “There’s ‘muffin’ like a good {insert what they are to you here, ie. teacher, therapist, etc}!”
And they are so easy to make. Your Happy Buddy can totally do most of the grunt work while you sit back and enjoy the delicious smells of fall baking in your oven.
Chocolate Chip Zucchini Muffins

Ingredients:
1 1/2 cups flour
3/4 cup sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 egg
1/2 cup vegetable oil
1/4 cup milk
1 T lemon juice
1 tsp vanilla extract
2 cups shredded zucchini
1/2 cup chocolate chips
Directions:
Combine flour, sugar, baking soda, cinnamon, and salt in a bowl.
Mix egg, oil, lemon juice and vanilla in another bowl.
Stir wet ingredients into dry ingredients until just moistened.
Fold in zucchini and chocolate chips.
Use a spoon to fill muffin cups about 2/3 full and then bake at 350 degrees for 20-25 minutes.
Enjoy the flavors of fall AND the sweet victory of getting your Happy Buddies to eat a vegetable.
